I’m writing this to you from a beautiful Greek Island, the most magical place I’ve been in a very long time. Having enjoyed many delicious ice creams this week, I felt inspired to share this recipe with you all which is an absolute winner.
I also completed my final weekend of pilates teacher training last weekend and now have a few months to rack up at least 50 hours of teaching before hopefully taking the exam later this year. This week’s recipe: Coconut Ice Cream with Tahini & Blueberries
This would make a good snack or dessert idea which takes about a minute to put together. I’ve included a shop bought ice cream for ease but this would work well with other flavours if you prefer.
I really like this Belazu tahini, Booja Booja ice creams and fresh berries, although frozen would work just as well too.
